Cookedrice cools slowly, giving the bacteria a warm, moist and sugary environment to multiply like crazy. Soaking raw rice in a cool, dark place doesn't create the conditions for bacteria to multiply quickly. To keep cooked rice for later, spread it out thinly on a plate or tray and put it in the fridge to cool, then transfer it to a container.
